I thought for a long time of what should be the value proposition of my blog. (Yes, inevitably I use branding terminology, what can I do?)

I finally decided that I want to share my gastronomical journal with the people like myself; people who enjoy to eat, who respect food and believe in the power of food -- simply because you are what you eat. To me, happiness is a long table full of great food (and wine, beer, cocktails depending on the season!) with great people and lots of laughter.

Therefore:

I will try to use organic, seasonal and local produce.
I will use wholesome ingredients to cook and bake with as least refined, processed ingredients as possible.
I will do my best to make my recipes healthier on the condition that it doesn't require me to give up on the quality and nutritional value of food. In other words, I will not use margarine because it has fewer calories and cheaper; butter is a natural dairy product which is okay to consume in moderation.


You will not see factory-made, industrialized, packaged food substances which have more chemicals or additives than nutrition in here. I believe that food has culture, history, traditions, and stories; a bag of chips simply doesn't.

Blogumda neyi anlatmak istedigimi, nasil farkli olmasini istedigimi uzun zamandir dusunuyorum.


Sonunda karar verdim ki, gastronomik guncemi yemek yemeyi ve pisirmeyi benim gibi goren insanlarla paylasmak istiyorum; yani yemek yemeyi seven, yiyeceklere saygi duyan ve besinlerin gucune inanan insanlarla... Cunku insan aslinda yedigi seylerden ibarettir. Tukettigimiz yiyecekler ve onlari nasil yedigimiz dis gorusunusumuzden, gunluk enerji seviyemize, sagligimiza ve hatta hayatimizin genel kalitesini yansir.


Bu yuzden bu blogdaki tarifler icin;
Elimden geldigi kadar organik, mevsimsel ve yoresel malzeme kullanacagim.
Mumkun oldugu kadar saglikli ve naturel besinlere yer verip, minimum rafine edilmis ve islenmis urunler kullanacagim.
Butun tariflerin olabildigi kadar saglikli olmasina ugrasacagim ama pisirdiklerimin besin degerinden vazgecmem gerekmedigi surece! Yani sirf daha az kalorili ve ucuz diye margarin kullanmam ben, tereyagi mis gibi dogal bir sut urunudur ve ben arada bir dozunda tuketmenin kimseye buyuk bir zarar vermeyecegine inanirim.


Ozetle, fabrika yapimi, endustriyel ve icinde besin degerinden cok kimyasal ve koruyucu olan gida maddelerine bu blogda yer olmayacak. Ben yemek yapmanin ve yemenin kulturel, tarihsel ve geleneksel izler tasidigina inanirim. Her yiyecekte biraz hikaye vardir; bu o patatesi eken ciftcinin emegide olabilir, dunyanin baska yerlerine ait degisik patates tariflerinin izleri de... Ama unutmayin bir paket patates cipsinin hic bir hikayesi yoktur :)
