Whole Wheat Black Olive Cake - Kepekli Zeytinli Kek


This is my aunt’s recipe; she used to bake this cake a lot when I was living with them. I tried it with whole wheat flour for the first time, and it turned out to be a very successful attempt! The cake batter was denser than what I remembered, but the cake was not dry at all. It came out with a great bread-like texture, but still soft and yummy.

Trying to legitimize once slice after the other by the fact that my olive cake contained olive oil, whole wheat flour and no sugar, I almost ate the half of it in the morning. I had to take the rest to my neighbors so that I would stop myself from finishing the whole thing. This savory cake is perfect throughout the day and it goes great with some cheese!

Ingredients:

4 eggs (room temperature)
3/4 cups of olive oil
3/4 cups of yogurt (strained yogurt if possible)
3 cups of whole wheat flour
1 cup pitted olives, chopped  (I used Kalamata olives because of the strong flavor)
2 teaspoons of chopped thyme (Fresh thyme would give more flavor, but dried flakes should work fine)
Juice of a half lemon
1.5 teaspoons of baking powder
1 teaspoon sea salt
2 teaspoons of black sesame seeds

  1. Preheat the oven to 350 degrees. Grease and flour a 9-inch cake pan.
  2. Beat the eggs thoroughly for 10 minutes, then add the olive oil and yogurt. Set aside 1 tablespoon of this mixture to use later.
  3. Add the lemon juice, thyme, olives and salt.
  4. Add the baking powder and flour. When over beaten the protein molecules in flour becomes stiff, and this would spoil the texture of the cake. It is best to mix the batter at minimum once the flour is added.
  5. Pour the mixture into the cake pan. Brush the top of the cake with the eggs mixture from before and sprinkle black sesame seeds.
  6. Bake for 35-40 minutes.Since this is a thick batter, I’d recommend that you make sure a toothpick comes out clean to see if it is baked properly.



Teyzosumun tarifi olan bu keki ben ilk kez kepek unuyla denedim. Kivami daha koyu oldu, hatta nerdeyse ekmek gibi oldu. Sabah kahvaltisinda icinde seker olmayasina, ve zeytinyagi ile kepekli unun hafifligine guvenerek buyuk bir kismini yedikten sonra bitirmemek icin kalanini komsuma goturmek zorunda kaldim. Yaninda peynir ve cayla cok guzel giden, gunun her saati icin uygun bir hafif bir tuzlu kek alternatifi.

Icine kekigin yanisira yesil sogan, nane, pul biber hatta belki biraz peynir bile eklenebilir. Bu kekin degisik alternatifleri uzerine calisip, yayinlayacagim. Teyzem tarifi yollarken corekotu’nun yanina “haha nasil bulacaksin bunu bakalim :)” diye not dusmustu ama Turkiye’den donmeden son dakikada yaptigim minik bir Migros seferi sayesinde hazirlikliydim bu sefer :) 

Malzemeler:

4 yumurta (oda sicakliginda)
3/4 su bardagi sivi yag (ben zeytinyagi kullandim)
3/4 su bardagi yogurt
3 su bardagi kepekli un
1 su bardagi dogranmis cekirdesiz zeytin
2 cay kasigi kekik (tercihen taze)
1/2 limon suyu
1.5 cay kasigi kabartma tozu
1 cay kasigi tuz
2 cay kasigi corek otu 


  1. Firini 180°C isitin, 25 cm capinda tercihen yuvarlak bir kek kalibini  yaglayip, unlayin.
  2. Yumurtalari 10 dakika kadar mikserde iyice cirpin. Uzerine yag ve yogurdu ekleyip, karistirin. Bu karisimdan 1 yemek kasigi kadar sonra kekin uzerine surmek icin ayirin.
  3. Limon suyunu, kekik, zeytin ve tuzu ekleyin.
  4. Kabartma tozu ve elenmis unu ilave edip, karistirip kaliba bosaltin. Un proteini fazla cirpilinca hamuru sertlestirir ve kekin dokusunu bozar, o yuzden unu ekledikten sonra sadece malzemelerin iyice karistigina emin olucak kadar karistirmak yeterlidir.
  5. Kalibin uzerine oncede ayrilmis yumurta karisimini surun ve uzerine corekotu serpin.
  6. 35-40 dakika kadar pisirin. Pisirme suresi firin ayarina gore degisebilir, biraz kalin bir kek oldugu icin benim tavsiyem, kurdan testi ile iyice pistigine emin olmadan cikartmayin.
